I am also using Windows 10 pc. Let us work together to sort this out.
Here's the steps you can try.
Reset the Edge
-Open Edge and click the 3 dots at the upper right side of your screen.
-Go to Settings
-Look for Reset Settings
-Click Restore settings to their default values.
(This will reset your startup page, new tab page, search engine, and pinned tabs. It will also disable all extensions and clear temporary data like cookies.
Your favorites, history and saved passwords will not be cleared.)
Restart your device and check if issue persist.

This made no difference. When I deselect sport and the trashy celebrity stories they still appear in the My Feed display that opens when I open a new tab. The only thing that changes correctly are the various topics I select in My Interests, those will display correctly in a row next to My Feed.

Note that while you can change their priority, there is no way to entirely get rid of the Bing Search box (though you can put Google Search box in the URL box at top in Search Settings), Frequent Sites, or the news Feed which can however be hidden out of sight at the bottom.
If you want to express your opinion on this to Edge Developers you can choose the Edge Hub (three dots to right of URL address bar) then Help & Feedback, then Feedback form to fill out. They will not even see it here as this is a forums mostly staffed by volunteers who try to help with your problems. If you want to click the Share link on your Feedback to post back a Share link to it here and others who find this thread can vote it up and add to it.

Hi Greg. Thanks for the link but it just tells me how to do what I'm already doing.
I'm not sure why you mentioned getting rid of the Bing search box, frequent sites or news feed, as I gave no indication that I wanted to remove those elements from my new tab page.
I thought my initial post was pretty clear about my issue: no matter what I select or deselect in the Personalise options, the stories in the My Feed section never change.
Here is an image to illustrate the issue. I have all Entertainment and Sport options disabled, yet you will see that at the very top of the feed are entertainment and sports stories: https://i.ibb.co/rbF0hRh/Bing-Issue.png

I was only explaining that is no way to get rid of those features on the page, they will always be there, although the news feed can be suppressed to below the bottom of the page if you want so you don't see it.
As to the feed choices not changing, there is nothing in the Settings that you can do more. It may be a problem in Edge which you can test by Resetting it (which I believe you've already done) and if that doesn't help then the most you can do is reinstall Edge: In Settings > Apps & Features uninstall Edge, restart PC, reinstall from a fresh download of new Edge here: https://www.microsoft.com/en-us/edge
If that doesn't work then please file feedback with Edge Developers which they are tasked to process and act upon. They will not even see it here where we are mostly volunteers giving our time to help others.

I have exactly the same issue and have sent feedback multiple times to the useless Bing Developers. NOTHING gets done and, sadly, the reset solution doesnt work. The only reason the preferences options are there is to irritate users who want to remove the trashy sports and celebrity junk from their newsfeed. WHY put the option there if it doesnt work

I know this was posted quite a while ago, but it looks like this thread has gotten votes and views recently. Therefore, I wanted to check in and see if you (or anyone landing on this thread via search) are still seeing this behavior on the latest version of Microsoft Edge.

I gave up trying to resolve this. I even googled how to uninstall Edge but that gave no results either as it is a forced entrenched app. Now I use Chrome instead of Edge because not even the latest updates have resolved this.
I have also searched through registry editor to see if there was any setting there that could disable the newsfeed completely but with my inexperienced eye I could not find anything.

There is no need to delve into the registry to hide the newsfeed on the New Tab Page. Click on the settings cog ⚙ and select Custom. Under Content at the foot of the window that opens, select Content off.
